What you need


  • 2 cups of quinoa
  • 1 tin of natural, organic coconut milk
  • Veggies (I used beans, capsicums, zucchini, broccoli, mushrooms, garlic and oignon)
  • 3 heaped tablespoons of curry
  • Coconut oil for frying


What you do


- Cook quinoa in water (quinoa needs to be soaked about 6 hours in clean filtered water and then washed before cooking)

- Stir fry the veggies in coconut oil for about 3 minutes

- Add the curry and heat for another 1 or 2 minutes

- Add the coconut milk

- Serve with your quinoa
