Crunchy Almond Butter Softy [Vegan Ice Cream]

w/ Magic Chocolate Sauce

 

 

Spring is here! And who says spring and sunshine, says ice cream ;)

 

On my side, it’s true that these first beautiful days made me want to make some homemade vegan ice cream again.

 

And this recipe is super soft and creamy, without packing too much sugar. I’ve also added some buckinis at the end to add a bit more crunch and, of course, some magic chocolate sauce to finish the whole thing.

 

The chocolate sauce will become hard straight-away by being in contact with the cold ice cream. On the opposite if you’d like a liquid chocolate sauce, feel free to check out this option.

Crunchy Almond Butter Softy [Vegan Ice Cream]

w/ Magic Chocolate Sauce

 

 

What you need (serves about 2 cups)

 

2 frozen bananas

1 can frozen coconut cream

1-2 heaping tablespoons almond butter

1 dash of your favorite milk

1 pinch cinnamon

1 pinch sea salt

1 heaping tablespoon buckinis for the crunch

 

1 serving Magic Chocolate Sauce or Liquid Chocolate Sauce as you prefer

 

Toppings (optional)

Raw pistachios, buckinis, cacao nibs

 

 

What you do

 

1. Prepare your chocolate sauce and put aside.

2. Blend all ingredients for your ice cream (except buckinis) into your high speed blender until well-combined.

3. Then add the buckinis and stir with a spoon, so you don’t smash them.

4. Pour a bit of the softy in some cups. Then add a layer of chocolate sauce and keep repeating the same process until the cups are full.

5. Finish with a layer of chocolate sauce and top up with your favorite toppings.
