What you need


For 2-3 people:

  • 1/4 pumpkin or yellow squash
  • 1 cup of black olives – pitted
  • Juice of 1 lemon
  • 1/2 cup first cold pressed virgin olive oil
  • Fresh coriander
  • 4 field mushrooms
  • Unrefined salt
  • Black cracked pepper


What you do


- Cut the pumpkin into fettuccine with a mandoline or a peeler

- Thinly cut your mushrooms

- Place your fettuccine and mushrooms in a salad bowl with olive oil, lemon juice, salt and pepper, mix well and marinate for about 1 hour

- Add the black olives and coriander on top before serving


You can serve with a cashew cream sauce, like I did.

For that, just blend a handful of raw cashews with a 1/4 to 1/2 cup of filtered water in your high speed blender. Add salt to taste.
