What you need

 

  • 1 cup of red or black quinoa
  • 2 shallots
  • About 125gr cherry tomatoes
  • 1/2 red capsicum
  • 2 big mushies
  • 1 handful pumpkin seeds
  • Unrefined sea salt (1 or 2 pinches)
  • 2 handfuls green beans
  • 2tbsp first cold pressed virgin olive oil
  • 1/2 lemon

 

What you do

 

- Preheat your oven at about 180

- Cook the quinoa (1 cup of quinoa for 2 cups of water). I used to cook it with a few pieces of algae (dulse or wakame), so the quinoa absorbs the minerals.

- Cook the beans during 6min in boiling water

- Remove the mushies stems and cut shallots, capsicum and 4 cherry tomatoes into small pieces

- When the quinoa is cooked, remove from heat and drain it

- Add the veggies, salt and pumpkin seeds to the quinoa and mix well

- Place the quinoa in the mushies and place them in the oven during about 15 min

- Serve with the beans and remaining cherry tomatoes

- Add a drizzle of olive oil and lemon juice on top

- You can also serve with brown rice or wholemeal pastas.
