What you need


For the crust

  • 2 cups walnuts
  • 1 cup oat meal (plain is fine too)
  • 1/2 cup flax meal
  • 1 heaped tablespoon of coconut oil
  • Salt


For the filling

  • 1/2 cup walnuts
  • 1/2 cup of coconut cream
  • 1/2 cup of almonds
  • 1 heaped tablespoon of coconut oil
  • 1 splash of oat or nut milk
  • About 650gr of pumpkin
  • 1 ripe banana
  • 2 teaspoons of cinnamon (or more)
  • Salt
  • Add maple syrop if you like it sweet


What you do


For the crust

- Process all ingredients in a food processor

- Spread and press the paste into a dish

- Place in the fridge while making the filling


For the filling

- Cut the pumpkin into large pieces and cook them in water until soft on the outside

- Place everything in the food processor and process until soft and well combined

- Adjust the taste with salt and/or maple syrop if necessary

- Place the filling on top of the crust and place the whole pie in the fridge for at least 1 hour
