I am so happy to share this quiche recipe with you because it took me a little while before figuring out how I would be able to make a quiche with no dairy, eggs or pastry.


As I am Belgian I used to eat quiches a lot and I loved it as it’s a very easy and delicious dish which is perfect with a side of garden salad. But most of the time, it’s full of cheese, cream, eggs and pastry… heaps of ingredients that are not part of my eating habits anymore. And I must say that each time I had a fabulous slice of quiche from Iku I was thinking to myself “OH MY GOD, it’s possible to make a quiche with no animal products and no refined or processed foods and it’s soooo good!!! I have to make my own!:D


So here we go, I finally managed to make mine…


What you need


For the base

  • 2 cups walnuts
  • 2 cups oat meal
  • 1 cup flax meal
  • 1 heaped tablespoon coconut oil
  • Salt


For the filling

  • Flesh of 1 young coconut
  • 2 cups cashews soaked in water overnight
  • 1 cup sundried tomatoes
  • 1 cup pistachios
  • 1 splash of nut milk
  • 1 splash of filtered water
  • Pinch of nutmeg
  • Salt to taste


For decoration

  • 1 small ripe avocado
  • 1 cup of pistachios



What you do


For the base

- Put everything in the food processor and process until well combined

- Spread and press the mixture into a plate or a tin

- Place in the fridge while making the filling


For the filling

- Put everything in the food processor and process until well combined

- Spread the mixture on top of the base

- Decorate with avocado slices and pistachios. You can also decorate with roasted veggies

- Place in the fridge for at least 1 hour
