Easy Super Healthy Chocolate Cake

 

I am totally in love with treats, chocolate and other delicious things. But while I do have a sweet tooth, I don’t like eating craps and refined sugars. I am also super careful to keep my blood sugar levels stable and as I am allergic to wheat, cakes are usually not for me.

 

This is why I love creating my own super healthy versions. Is anyone like me?

 

I recently started to use chickpeas as a flour replacement and I loved it. This chocolate cake is delicious but super healthy. Use xylitol as a sweetener and you’ve got the perfect healthy chocolate cake!

Easy Super Healthy Chocolate Cake

 

 

What you need (serves 10-12)

 

1 can (400 gr) chickpeas

1 small zucchini

4 eggs

1/2 cup (125 gr) cacao powder

1/2 to 3/4 cup xylitol

About 4 squares dark chocolate – roughly chopped (I used Lindt 90%)

1/2 teaspoon sea salt

1 teaspoon cinnamon

 

 

Toppings

Cinnamon powder

 

 

What you do

1. Put all ingredients (except chocolate squares) in your high speed blender and blend until well combined.

2. Pour the mixture into a cake tin and sprinkle the chocolate chunks on top. Press them slightly into the mixture, so they will melt inside.

3. Bake at 180 degrees for about 20 minutes (or until a fork comes out dried).

4. Garnish with some cinnamon and / or cacao powder.
