Easy Lentils Stew


I love quick and easy to prepare meals that you can do in minutes but are healthy and nutritious.


Now that I am a mum, I totally understand how it might sometimes be a challenge to prepare lunches and dinners for the whole family. This lentils stew will definitely help you to provide great, nutritious and healthy food for the whole family in minutes.


What you need is a few basic ingredients as well as some great spices that you love.

You can throw the leftovers in a salad the day after, it will make a nice and fresh meal too.


Also, for the tomato sauce, I would recommend to choose either a brick / bottle packed one or to make your own rather than the one packed in cans, so you avoid eating some aluminium with it ;)

Easy Lentils Stew


What you need (serves 4)


A bowl of lentils

About 600 ml tomato sauce (choose wisely, read the ingredients)

2 carrots – grated

1 red bell pepper – diced

2 handfuls fresh spinach

a few pinches corriander

1 pinch hymalayan salt

a few pinches paprika

2 garlic cloves – chopped



What you do


1. Soak lentils in filtered water for a few hours. Rinse and discard water.

2. Cook lentils in tomato sauce and add spices and garlic. Stir well and bring to a simmer.

3. Once lentils are cooked, remove from heat and add the veggies on top.

4. Mix well and serve warm.
