Double Chocolate Cake (raw & vegan)

 

This double chocolate is raw and vegan and is absolutely delicious.

 

If you want something rich and decadent, this one is for you. I loved it and shared it with Niko and we both enjoyed it A LOT!

 

Even if it’s really healthy, it’s still very rich in nuts, which is are definitely calorie dense… so keep that in mind but hey it’s up to you. IYou can still eat it by yourself if you want ;)

 

The crust is really crusty while the first nutty-chocolate layer is softer and intense (it was my favorite layer), due to the dates. The mousse is creamy and delicious and is perfect with the fresh strawberries. Finish it with my magic chocolate sauce and it’s perfection!

Double Chocolate Cake

 

 

What you need (serves 2-4)

 

Crust (base)

1 cup Brasil nuts

1 cup almonds

1/2 cup coconut shreds

1 tbsp xylitol or coconut sugar

1/2 cup coconut oil melted

Cinnamon & sea salt

 

1 st chocolate layer

1/2 of the base mixture

2 tbsp cacao

3 dates

 

 

Mousse layer

1 avocado

3 tbsp cacao

1 tbsp xylitol or coconut sugar

1 tbsp chia seeds

4 tbsp melted coconut oil

1 pinch cinnamon

1 pinch sea salt

 

 

Toppings

Fresh Strawberries, pistachios, chocolate sauce.

 

 

What you do

 

1. Place all ingredients for the base into your high speed blender and mix until well combined.

2. Put half the mixture aside and press the remaining into a small round tin. Place the tin in the fridge while preparing the rest.

4. Blend the remaining nutty mixture with your cacao powder and your dates and press it on top of the base you have in the fridge. Put back in the fridge and prepare the mousse.

5. Blend all ingredients for the mousse into your high speed blender and spread on top of your 2 layers, then back in the fridge for about 2 hours.

6. Garnish with your favorite toppings and some magic chocolate sauce.
