Creamy Coconut Quinoa Porridge With Cherries


Quinoa is one of my favourite food because it’s full of goodness and very versatile.


This little creamy coconut quinoa porridge is delicious, easy to prepare and is ideal for breakfast or lunch.


I make this when I want something creamy and slightly sweet, yet packed with proteins. I think the creaminess and comfort of this porridge is just a perfect combo for a nice warming autumn meal.

Creamy Coconut Quinoa Porridge With Cherries



What you need (serves 1)


2 cups cooked white quinoa
1 cup coconut milk (or your favourite milk)
1 cup pitted cherries



Dried mulberries

Cacao nibs

Extra cherries



What you do


Carefully heat your quinoa and coconut milk on low heat until warm.

Then turn off the heat and add the cherries.

Stir well.

Serve in a big bowl and top up with some cinnamon, mulberries, cacao nibs, fresh cherries and other delicious topping of your choice.
