What you need (for 2 to 3 servings)

 

For the truffle centre

  • 1 cup of raw cashew nuts soaked in almond milk for 6hours
  • 1 tablespoon of flax meal
  • 1/4 cup brazil nuts
  • 1 tablespoon of cacao powder
  • 1 teaspoon of honey (or 1/4 cup of pitted soft dates)

 

For the sauce

  • 2 heaped tablespoons of cacao powder
  • A splash of almond milk
  • 1 teaspoon of honey (or more if you have a sweet tooth)

 

Decoration

  • 1 handful of walnuts (roughly chopped)
  • 1 handful of goji berries

 

What you do

 

For the truffle centre

- put everything in the food processor (incl. cashew with milk) and process til well combined

- divide the paste into 2 big balls and place them into cups

 

For the sauce

- blend all ingredients until well combined

- pour the sauce into the cups, on top of the truffle balls

- sprinkle with walnuts and goji berries and place into the fridge for about 1 hour
