Chocolate Chip Quinoa Cookies

 

Did you know that quinoa was one of the rare vegan sources of complete proteins?

 

That means that you have all amino acids you need in this super grain. It’s so good and healthy that I thought, for sure, there is a way to make a healthy treat with that… Introducing my Dark Chocolate Chip Quinoa Cookies!

 

It definitely is Paleo friendly. It’s absolutely delicious and most of all, it won’t spike your blood sugar levels, which means that these quinoa cookies will be nourishing and filling on the long run.

 

To be honest, I made those cookies from scratch in minutes. You just need to buy some quinoa flakes (in any health food store or even supermarket), a couple of eggs (or flax or chia eggs), some coconut oil, your favorite sweetener and a bark of your favorite dark chocolate. That’s it!

Chocolate Chip Quinoa Cookies

 

What you need (for about 6 cookies)

 

About 125 gr quinoa flakes

2 eggs (or chia eggs, or flax eggs)

2 tablespoons of coconut oil

1 pinch Himalayan salt

About 4 tablespoons of your favorite solid sweetener. I used stevia and xylitol but you can also use coconut sugar

About 1/2 to 3/4 cup of dark chocolate chunks, or chocolate chips

 

 

What you do

 

1. Preheat oven to 180 degrees C (350 F)

2. Put all ingredients in a mixing bowl and stir with a spoon until well combined.

3. Grease a tin and make about 6 balls with the batter.

4. Dispose your balls on your tin and gently press to make the cookies.

5. Bake for about 20 minutes.
