This recipe has been inspired by the beautiful Jess Ainscough’s Apple and Cherry Pudding. However, when I tried it, I changed a few ingredients to try reduce the sweetness and it ended quite different. It’s actually more like a crumble than a pudding consistency, so that’s why I decided to post it as a new recipe. Enjoy ;)

 

What you need

 

  • 1 apple chopped in small pieces
  • 1 cup of pitted cherries (frozen is fine)
  • 2 tablespoons oat bran
  • 1 thick slice of your favourite sprouted bread chopped in small pieces
  • 1 handfull of pepitas or pumpkin seeds
  • Juice of 1 lime

 

 

What you do

 

- Place cherries in a baking dish and cover with apples and pepitas

- Cover with breadcrumbs, then oat bran and lemon juice

- Place in the oven heated to 180°C for 35-45 minutes
