What you need

 

  • a few kale’s leaves (stems off)
  • 1 cup cooked quinoa
  • 1/2 cup cooked lentils (optional)
  • 1/2 pomegranate
  • 1 handful pumpkin seeds
  • 1 handful cherry tomatoes
  • 1/4 Spanish onion (diced)
  • 1/2 cucumber (diced)
  • 1/2 red capsicum (diced)
  • 1 handful pecans
  • 1tbsp chia seeds
  • 1tbsp black sesame seeds

 

What you do

 

- Throw everything in a bowl

- Serve with a nice homemade dressing with tahini or simply with some fresh lemon juice or apple cider vinegar
